Ingredients
  

  • 1 800 g / 80% Ostrich Meat (cubed)
  • 1 100 g / 10% Beef or Lamb Fat
  • 1 50 g / 5% Harissa Paste
  • 1 20g / 2% Garlic (minced)
  • 1 10 g / 1% Smoked Paprika

Instructions
 

  • Marinate the Ostrich:
    Add cubed ostrich meat to the marinade.
    Mix well and let it marinate for at least 1 hour (or overnight for more flavor).
  • Skewer & Cook:
    Thread the marinated ostrich onto skewers.
    Grill over medium-high heat for 3-4 minutes per side, until nicely charred but still tender.
  • Serve & Enjoy:
    Garnish with fresh parsley and serve with flatbread, grilled vegetables, or a yogurt dip.
