Pat the ostrich steaks dry and season with salt, pepper, rosemary, and thyme.
Heat olive oil in a pan over medium-high heat.
Sear the steaks for 2-3 minutes per side for medium-rare.
Add garlic and butter in the last minute of cooking, basting the steaks.
Remove from heat and let the steaks rest for 5 minutes.
