Ostrich Bolognese

Ingredients
  

  • 1 500g Ostrich Mince
  • 1 2 tbsp Olive Oil
  • 1 1 medium Onion (finely chopped)
  • 1 1 medium Carrot (diced)
  • 1 1 stalk Celery (diced)
  • 1 3 cloves Garlic (minced)
  • 1 2 tbsp Tomato Paste
  • 1 400g (1 can) Canned Tomatoes
  • 1 250ml Beef or Chicken Stock
  • 1 1 tbsp Worcestershire Sauce
  • 1 1 tsp Italian Herbs
  • 1 1 leaf Bay Leaf
  • 1 To taste Salt & Pepper
  • 1 For serving Parmesan (grated)
  • 1 As needed Cooked Pasta

Instructions
 

  • Sauté the Base:
    Heat olive oil in a large pan over medium heat.Add chopped onion, carrot, and celery. Sauté for 5-7 minutes until softened.Stir in minced garlic and cook for 1 more minute.
  • Brown the Ostrich:
    Add the ostrich mince and cook, breaking it apart, until browned.Season with salt and black pepper.
  • Build the Sauce:
    Stir in tomato paste and cook for 2 minutes to caramelize.Pour in the red wine (if using) and let it reduce by half.Add canned tomatoes, stock, Worcestershire sauce, Italian herbs, and bay leaf.
  • Simmer to Perfection: Reduce heat to low and let it simmer uncovered for 45 minutes to 1 hour, stirring occasionally.Adjust seasoning to taste.
  • Serve & Enjoy:
    Toss with cooked pasta or serve on top.Garnish with grated Parmesan cheese and fresh herbs.
